What you'll do

• Develop and maintain an extensive wine list that reflects the philosophy and cuisine of AKI London, focusing on both local and international selections.
• Conduct regular tastings to evaluate and select wines that align with the restaurant's menu and seasonal offerings.
• Provide personalized wine recommendations to guests, enhancing their dining experience through expert guidance and knowledge.
• Collaborate with the kitchen team to create innovative food and wine pairings that elevate the overall dining experience.
• Train and mentor front-of-house staff on wine service, enhancing their knowledge and confidence in recommending wines to guests.
• Monitor inventory levels and manage wine storage to ensure optimal conditions and availability of selections.
• Stay updated on wine trends, industry developments, and new releases to keep the wine list fresh and exciting.
• Organize and host wine tastings and events to engage customers and promote the restaurant's wine offerings.
• Build relationships with wine suppliers and distributors to source unique and high-quality wines for the restaurant.

• Provide exceptional customer service, addressing any guest inquiries or concerns regarding wine selections or pairings.

Requirements

• Proven experience as a Sommelier or in a similar role within a fine dining establishment, with at least 3 years of relevant experience.
• In-depth knowledge of wine regions, varietals, and production methods, with a passion for continuous learning in the field.
• Strong communication skills, with the ability to convey complex wine information in an engaging and approachable manner.
• Excellent customer service skills, with a focus on creating memorable dining experiences for guests.
• Ability to work collaboratively within a team and foster a positive work environment.
• Strong organizational skills and attention to detail, particularly in inventory management and wine service.
• Certification from a recognized wine education program (e.g., WSET, CMS) is highly desirable.
• Flexibility to work evenings, weekends, and holidays as required by the restaurant's schedule.

• Experience in a high-volume restaurant setting, demonstrating the ability to thrive in a fast-paced environment.
